It should come as no surprise that when I planned a return trip to Belgium, the first thing I wanted to research was where to find the best waffles in Bruges. Well, actually, it was a tie between that and coffee shops.
I have a killer sweet tooth and if a destination is known for a certain treat, you can guarantee I want to find where to find the best of the best...and share those findings with you!
The last thing I want to do is waste calories on a subpar waffle. After wandering Bruges and eating my way through waffles, it didn't take long to discover there is a noticeable difference between the quality spots and the mediocre ones.
If you're visiting Bruges, enjoying warm, fresh off the press waffles if a must. And when I'm talking waffles here, I'm talking Liege waffles. The ones that have pearlized sugar in the mix and are made from a thicker batter...almost dough like. Belgian waffles, while delicious, don't have the "melt in your mouth" factor that Liege waffles do.
I highly recommend you try a plain Liege waffle first, to get the full flavor, and then for your second run (or tenth) go to a place that has toppings like gelato, berries, and cream.

House of Waffles is rare in that it has both a to-go window (how most waffles are sold) and a dine in restaurant. If you dine in, you'll have a wider variety of options for both sweet and savory waffles.
When ordering, first choose if you would like a Belgian waffle or Leige waffle. I recommend Belgian for savory toppings and Liege for sweet.
I ordered my waffles from the to-go window. Though, if I was in Bruges during winter, having the option to sit down and enjoy your waffle inside vs eating it as quickly as possible before it goes cold, is nice. Too bad I didn't know about this place when Jake and I were here over Christmas in 2017.
House of Waffles always makes your waffle fresh. This makes a world of difference. Many waffle shops will constantly make waffles and then pile them up so they can immediately serve customers.
I learned quickly that if you see a stack of waffles in the window and customers being served from that stack, stay away. These waffles don't melt in your mouth and lack flavor. What a difference just a few minutes of sitting out can make!
I tried one plain (my test to see how good the actual waffle is) and it was insanely good. This waffle had just the right amount of sweetness and had a major "melt in your mouth" factor. I returned another day and tried a waffle with fresh strawberries and cream...divine.
If you dine in, try a savory option for something different. Like the Norwegian with smoked salmon, red onions, cream cheese and herbs. Or the Italiano Vero with buffalo mozzarella, cherry tomatoes, balsamic glaze, and pesto.
House of Waffles is the perfect stop after visiting Burg Square as it's a 3-minute walk away.

The gelato is delicious and award winning, the owner trained in Italy after all.
Oyya Waffles is perfect for those who like options. There are 20 ice cream flavors each day along (with vegan options), frozen yogurt, and a wide variety of toppings like chocolate, fruit, whipped cream, nuts, candies, and more.
No matter the day, hour, time of year, or weather, there will always be a crowd getting their fresh waffles and gelato at Oyya.
3. Flavourrs

If you're looking to pair your Bruges waffles with quality coffee, FlavouRRs is where you'll want to go.
The owner is a trained barista, ice cream maker, and Master Patissier. So not only will you find made-to-order waffles here, but beautiful pastries, cakes, incredibly smooth and flavorful gelato, and a perfectly made caramel latte or flat white.
I highly recommend topping your waffle with warm Nutella. The serving size, as you can see in the photo, is more than a mere drizzle...yum!
4. Otto Waffle Atelier
The most Instagrammable and creative waffles in Brugge that are also Gluten-Free
The photos of Otto Waffle Atelier had me itching to try them myself. Instead of the usual waffle pattern, these are made in a lace pattern. Add the beautiful topping options and you've got one Instagrammable waffle...though looks aren't the only reason I consider them to make the best waffle in Brugge.
After eating waffles for several days, I really enjoyed that Otto's waffles weren't as heavy or dense. The texture was light and not quite as sweet. I went minimal with my toppings and chose the yogurt with honey and cinnamon. Not only was it delicious, but I didn't feel nearly as guilty for eating this treat. It was a nice change from all the heavy Leige waffles I'd been devouring.
Upon researching their website after my visit, I learned that these waffles were made with oat flour and gluten-free. Say what?! I had no idea...they did not taste gluten-free at all.
The only draw back, is outside the plain waffle dusted with coconut blossom sugar for €3.50, the waffles with topping are expensive at €8.50.
5. Chez Albert
One of the best plain waffles in Bruges *when fresh*
Chez Albert is one of the most famous and popular places to get a waffle in Brugge. The location can't be beat, a 1-minute walk from Grote Market.
These are some of the best plain Liege waffles in Bruges. Prices are good considering it's location in the very center of the tourist zone. Plain waffles are €2.70, with chocolate or whipped cream €3.70, strawberries and chocolate €6.
When there's a line, which is almost always, the waffles are good. This is because they're serving waffles so fast they haven't had a moment to sit. When there is no line, ask for a fresh waffle.
One time I visited there was no line (it was during COVID and there were few tourists). They served me a waffle from the case which had about 10 waffles sitting in there. The waffle was not good. If it sits for too long it looses that "melt in your mouth" factor. The pearlized sugar gets hard, which makes the entire waffle hard.
So, when the waffles are fresh they are fantastic. Just don't let them serve you one that's been sitting in the case.
I will note that this occurrence must have been a one-off. Look at their Google Reviews and you'll see 4.6 stars and 1,400 reviews.
Making sure you are served a fresh waffle will be important no matter where you go, so take this advice to whichever waffle shop you visit.
